      Using clarified butter isn't really a necessity in this recipe, you are getting the pan too hot if the fat in the butter starts browning, eggs no matter how you make them should always be cooked gently. Like any decent restaurant kitchen, they clarify butter using many pounds of it at the start of the day, so that is what they always have on hand. Fine restaurants float on a sea of butter, it helps gives everything a rich taste.

                          I make these eggs just about every Sunday. They are definitely a favorite around here. I use toasted multigrain sourdough instead of toast points for a little more of a rustic feel, but otherwise, it's the same.

                              My Dad made almost the same thing growing up. I use extra sharp cheese. The garlic toast he did was smaller. Same process. He stirred constantly. I use high heat and it gets the same texture.
